Smoked Salmon Potato Skins

Try this tasty recipe, serve as an appetizer or as a snack.

Smoked Salmon Stuffed Potato Skins

Ingredients per serving:

1 medium potato
1 1/2 oz. Laszlo’s Gourmet Smoked Salmon
2 tablespoons of sour cream
2 tablespoons red or black caviar

Preparation:

Wash each potato, prick with a fork and rub with salt.

Bake in a 350°F oven until potato is tender, (about 1 hour depending on size of potato).  Cut each potato in half and scoop out the flesh, without breaking the skin, leaving only a thin layer of potato on the inside.

Chop the smoked salmon and divide between potato halves. Spoon in 2  tablespoons of sour cream and top with red or black caviar, or some of each.  Serve warm.

Optional variation: Prepare potato’s as directed above, except top smoked salmon with your favorite shredded cheese and bacon bits. Broil until cheese is melted. Serve caviar and sour cream on the side.

    I would like to say… Hi to joe. How’s your life and health? We hope that you’re doing well.

    Do you still remember me? I really thank you for the smoked fish you sent through my aun’t Susi. Since we moved to Indonesia, we miss your smoked fish very much and of course we miss you too.

    We really enjoy your smoked fish, for your info we eat the fish little by little due to limited amount of the fish and everyone wants to take a bite……hahaha.

    As you know it, we can have the fish if my aun’t or uncle return to Indonesia and kindly bring your excellent smoked fish for us.

    Hopefully someday we go back to the U.S to visit you in Sacramento and enjoy your bagel sandwich with smoked fish and cream cheese. Still remember the taste though.

    Again, we thank you for your kindness so we can enjoy your smoked fish even we are thousands miles away from you. We really appreciated.
