January — Call Ahead
Just a quick reminder that Joe likes to take his annual vacation in January. I’ll try to keep you posted as to when he plans to close up shop and head out to parts unknown. I won’t promise you anything.
Smoked Salmon Bagel
Joe can be pretty unpredictable this time of year and who can blame him. It’s a lot of work providing everyone with the BEST smoked salmon in the country. He deserves a rest.
If you decide to make a trip to Old Town Sacramento — be sure to call in advance to be sure you don’t miss out.
I just munched down a lucious piece of plain smoked salmon. I’ll be ordering more in February. I like to have Joe vaccum pack my smoked fish in smaller packages, since once they are opened, they really should be eaten in a week or two. Fortunately, a vacuum packed package will keep up to four months in the fridge.
Don’t make the mistake of trying to freeze it. Smoke fish simply does not freeze well. You should be able to gobble it up in four months anyway.
